How to visit a Parmigiano Reggiano factory?
First of all, let’s make one thing very clear: the cheeses called ‘Parmesan’ outside of Italy are NOT PARMIGIANOS REGGIANOS, they are versions. The traditional and authentic has been made for hundreds of years only in Parma, and they follow VERY strict rules! Another important fact to remember is that Parmigiano Reggiano is NOT A brand; it is a type of cheese and is considered the king of Italian cheeses.
And why is it so special?
Because it is a completely artisanal cheese. It is all handmade and starts with the differentiated feeding of the cows. Milk is essential to succeeding in making this cheese of the gods! The quality control is super strict, and the cheeses that are not approved, are eliminated. The maturation of Parmesan can vary between 18, 24, and 30 months, and a whole piece of this gastronomic wonder can cost up to 1,000 euros and weigh 30 kilos! To schedule a visit, go to this website, which is the website that brings together all the certified producers of parmigiano. At the end of the visit, there is a tasting and several tips on how to consume the cheese.
