Florence breathes art, history and culture, and everyone knows that; but one of the main attractions of the city is also its admirable gastronomy and, today, I invite you to discover the best typical foods of Florence. It’s hard to talk about Italian cuisine! Very difficult! Why? Because the country offers us wonderful dishes, in all regions, and the fear of being unfair and leaving some of them behind is huge! However, we need to talk! And today we are going to talk about the typical foods you need to try in Florence.

As I always say: it is important to remember that Italian cuisine presents us with a fusion cuisine, and each region invented, recreated, gave its personal touch and perfected different flavors (many of them brought to the country by the different peoples who passed through there throughout centuries) in a unique way and with its very special details. The Italian MASTERS the art of eating well and, of course, this is reflected in the way he cooks – or is it the other way around? Fact is: Italian cuisine is very special and this has become a symbol of Italians’ passion for good food.

A little of the history of Florentine gastronomy.

Florentine cuisine has a long history, it could not be otherwise. The first historical records of Florentine cuisine were found in Etruscan tombs, but it was with the Renaissance and the powerful Medici family that Florentine cuisine reached its peak. Bernardo Buontalenti, one of the best architects of the time, worked with the Medici and was one of the greats for organizing large parties and creating new recipes. Buontalenti had caves dug into the city to store ice and fresh food: and here we had an outline of what, in the future, we would know as a refrigerator. Traditional Florentine cuisine is very much based on bread, which is made with the most diverse types of flour you can imagine. That said, let’s find out which are the typical foods of Florence that you need to try!

1) Typical foods you must try in Florence: Bistecca alla Fiorentina

The classic of classics when we talk about Florence! The queen, almighty, the incredible Bistecca alla Fiorentina! It is a thin cut of beef prepared with a whole ‘ritual’: high cut, the bone must be present and it must be done on the grill. The meat cannot be well done, it must be medium at most. The steak is VERY juicy, and melts in your mouth! Every bit you seem to dream! Consider that a good steak weighs around one kilo! It usually accompanies fries, salad or vegetables: as if you needed it!

2) Typical foods you must try in Florence: Pappardelle with wild boar sauce

Pappardelle with wild boar ragout is another Fiorentino classic! With an almost magical flavor, it is a dish that is easily appreciated by anyone who tastes it, as it has a very pleasant taste on the palate. The traditional pasta, of course, is pappardelle, but it is also possible to find the dish made with other types of pasta, such as tagliatelle and pici Senesi. The sauce is made with wild boar meat that is cooked with bay leaves, onions, celery, carrots, rosemary, pepper, among others: it’s a perfect alchemy! That’s it! Wild boar are very common animals in the Tuscan Maremma and, although their meat has a strong flavor, it is not an unpleasant taste and, surprisingly, it is not a heavy sauce! 3) Typical foods you must try in Florence: Ribollita

Where are the people who love soup? So try ribollita! Ribollita is one of the most famous soups in Tuscany and has its origins in the Florence and Arezzo area. Soup is a classic (and full of flavor!) example of a budget dish, as it’s made with leftover dishes from previous days. Evidently, in restaurants they use fresh ingredients, right people? However, when the dish is made at home, it’s not always like that! Reuse appeared in the period of wars and was a way of saving, especially in the winter period. The soup is essentially made with borlotti beans and cabbages, but there are those who include several other vegetables in the preparation, such as potatoes and carrots. Either way: it’s a classic and it’s delicious!

4) Typical foods you must try in Florence: Schiacciata

One of the most appreciated delicacies in Florence is Schiacciata. Schiacciata is a focaccia baked in the oven and seasoned with olive oil and coarse salt, only! It is common to be served with antipasti, or with soups. You can also eat it filled with sausages or cheese, for example. It’s light, tasty and another Fiorentino classic. There’s also the sweet Schiacciata, which goes into the oven with fruit – or is just sprinkled with sugar when it comes out of the oven – and it’s also a spectacle! Also read Where to picnic in Florence?

5) Typical foods you must try in Florence: Trippa alla Fiorentina

I already know that many have turned up their noses, right? But don’t be fooled: the dish is delicious! It is considered a ‘poor’ dish, but it is very nutritious and tastes amazing! Eating tripe in Florence is really an experience: tripe already has a very characteristic flavor, but the way the dish is prepared gives it a whole new flavor. It is seasoned with tomato sauce, rosemary, celery, onion, pepper and grated Parmesan. The best part? To pass the bread on the plate when we finish eating!

Do you like good wine? Then be sure to try three impeccable Tuscan wines: Chianti, Brunello di Montalcino and Nobile di Montepulciano.

Curiosity

  • Speaking of wine… Did you know that one of the most expensive wines in the world is produced in Tuscany? We are talking about the precious and exquisite Sassicaia DOC by Tenuta San Guido. Its exclusivity is due to the fact that it is produced exclusively in the Tenuta San Guido winery, in small quantities and only they own all the vineyards in this area delimited by the DOC denomination. Depending on the vintage, you can pay more than 1,000 EUROS a bottle! In time: the rarest (and expensive!) bottle of this wine is from 1968 and currently costs around 3,000 euros.

Gold Tip

  • If you are in a city outside the Tuscan region, avoid ordering typical dishes from there. This is because, as we have said several times in our posts, each region has its own typical dishes and they are VERY proud of it, and they may even feel offended if they receive a request for a dish that is not typical of the region where you are. In some restaurants, there is not even a choice of dishes from other regions – especially the more traditional restaurants – however, many places have already understood that globalization also includes gastronomy and, therefore, in their menus, they offer dishes from different Italian regions.
